For the herbed mayo

For the sandwich
2slicessourdough bread
1tablespoonbutter(softened)
2tablespoonscaramelized onions(store-bought or homemade)
2slicesGruyère cheese
½cuparugula(roughly chopped)
2slicesGouda cheese
Instructions
In a small bowl, stir together the mayonnaise, parsley, and dried oregano until well combined.
Spread butter evenly on one side of each slice of sourdough bread.
Flip the slices over and spread the herbed mayo on the inside. Layer caramelized onions, Gruyère, arugula, and Gouda over one slice, then top with the second slice, buttered side facing out.
Place the sandwich in a non-stick skillet over medium-low heat. Cook slowly until the bread turns golden brown and crisp, about 6 to 7 minutes per side, pressing gently to help the cheese melt.
Remove from the pan, slice, and serve warm with cherry tomatoes on the side.
