Caramelized Onion, Arugula, and Herbed Mayo Gourmet Grilled Cheese

Ingredients

For the herbed mayo

  • 3 tablespoons mayonnaise
  • 1 teaspoon fresh parsley (chopped)
  • ¼ teaspoon dried oregano

For the sandwich

  • 2 slices sourdough bread
  • 1 tablespoon butter (softened)
  • 2 tablespoons caramelized onions (store-bought or homemade)
  • 2 slices Gruyère cheese
  • ½ cup arugula (roughly chopped)
  • 2 slices Gouda cheese

Instructions

  • In a small bowl, stir together the mayonnaise, parsley, and dried oregano until well combined.
  • Spread butter evenly on one side of each slice of sourdough bread.
  • Flip the slices over and spread the herbed mayo on the inside. Layer caramelized onions, Gruyère, arugula, and Gouda over one slice, then top with the second slice, buttered side facing out.
  • Place the sandwich in a non-stick skillet over medium-low heat. Cook slowly until the bread turns golden brown and crisp, about 6 to 7 minutes per side, pressing gently to help the cheese melt.
  • Remove from the pan, slice, and serve warm with cherry tomatoes on the side.

Notes

  • Cook on medium-low heat to allow the cheese to melt fully before the bread browns too quickly.
  • Gruyère brings a nutty flavor while Gouda adds a creamy melt, so both are worth keeping.
  • Caramelized onions can be made ahead and stored in the fridge for quick sandwiches.
  • Arugula adds a fresh bite that balances the richness of the cheese and mayo.
