Ingredients

  • 2 cups rolled oats
  • 3 cups milk
  • 1 cup water
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons honey divided (preferably local)
  • 4 tablespoons butter melted
  • 6 tablespoons light brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup Greek yogurt
  • ¼ cup cream cheese softened at room temperature

Instructions

  • Add oats, milk, and water to a medium saucepan and place over medium heat. Cook, stirring occasionally, until the oats become thick and creamy, approximately 8-10 minutes.
  • Remove from heat and stir in salt, vanilla, and 2 tablespoons of honey.
  • In a small bowl, combine the melted butter, brown sugar, and cinnamon. Whisk until completely smooth and creamy.
  • In a separate small bowl, mix the Greek yogurt, cream cheese, and remaining honey until smooth and creamy.
  • Divide the oatmeal between 4 bowls and top with a dollop of brown sugar and cinnamon mixture. Swirl in a dollop of the cream cheese mixture and serve immediately. Enjoy!

Notes

  • Use rolled oats for the best texture. Old-fashioned rolled oats cook up creamy while still holding their shape. Quick oats will become softer and slightly mushy.
  • Stir occasionally while cooking. This keeps the oatmeal from sticking to the bottom of the saucepan and helps create a smoother, creamier texture.
  • Adjust sweetness if needed. The brown sugar swirl and cream cheese topping already add sweetness, so you can slightly reduce the honey in the oatmeal if you prefer a milder flavor.
  • Let the oatmeal sit briefly before serving. After removing from the heat, letting it rest for a minute allows the oats to thicken slightly.
  • Make it extra cinnamon-roll inspired. Add an extra sprinkle of cinnamon sugar or a small drizzle of honey on top just before serving.
  • Best served warm. The cinnamon swirl melts into the oats and the cream cheese topping softens slightly, creating that classic cinnamon roll style flavor.
