Peaches and cream crumble bars are a rich, fruit-forward dessert that works for gatherings or everyday baking. They work well for gatherings, bake sales, or casual entertaining, and they can be made ahead of time. This easy peach bar recipe delivers bakery-style results at home.

Ingredients

  • ¾ cup sugar divided
  • 2 c.ups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup butter melted
  • 12 oz cream cheese softened at room temperature
  • ¼ cup sour cream
  • 2 teaspoon pure vanilla extract
  • 1 large egg
  • 10 oz peach jam

Instructions

  • Preheat the oven to 375℉. Line a 9x13-inch baking pan with parchment paper.
  • In a large bowl, combine ½ cup of sugar with flour, baking powder, and salt. Pour in the melted butter and stir until a crumbly dough forms.
  • Press ⅔ of the dough on the bottom of the prepared baking pan.
  • In a smaller bowl, whisk together the cream cheese, sour cream, vanilla, egg, and remaining sugar. Pour the cream cheese mixture on top of the crumble base and spread the peach jam on top of the cream cheese layer.
  • Crumble the reserved crumble topping on top of the peach jam and transfer into the oven to bake until lightly golden and puffed, approximately 35-40 minutes. Allow to cool completely before slicing and serving.

Notes

  • Make sure the cream cheese is fully softened before mixing to avoid lumps in the filling.
  • The cream layer sets as it cools, and slicing too early can cause messy cuts. For clean slices, chill the bars for 1 to 2 hours before cutting.
  • Store in the refrigerator in an airtight container for up to 4 days.
  • These bars freeze well. Wrap individual slices tightly and freeze for up to 2 months.
